Homemade cookies give me joy although I often pay for it later if I over indulge. I find homemade baked goods hard to resist so I don’t bake that often. However, I love to share recipes of desserts I’ve tried and that I occasionally will make. As a kid, one of my favorite prepackaged cookies used to be Keebler Pecan Sandies. Now that I’m an adult I usually hold out for homemade cookies, keep in mind the key word here is usually. There are a few I can’t resist which I’ll share in a future post.
My friend Anne shared these homemade pecan sandies with me awhile back and they are delicious. They are so light and buttery it’s difficult to eat just one. These pecan sandies would pair nicely with a scoop of Talenti Gelato or your favorite ice cream. I haven’t personally made them, but the recipe is very simple and straight forward. Homemade Pecan Sandies | | Print |
- 1 cup Chopped pecans
- 1 cup unsalted butter, softened
- ⅔ cup confectioner's sugar
- ¼ cup light brown sugar
- 2 tsp vanilla
- ¾ tsp salt
- 2¼ cup flour
- Lightly toast pecans in a skillet over medium heat,until fragrant, shaking frequently so they don't burn.
- Cream butter and sugar with mixer-they don't have to be light and fluffly.
- Stir in vanilla and salt.
- Add the flour and pecans and form a stiff dough.
- Roll into balls and flatten with hand on parchment lined or silpat lined baking sheet.
- Preheat oven to 325 degrees. Bake about 15-17 minutes.

I have baked so many different kinds of cookies, but I have never made Pecan Sandies. I have pinned these and these will be a part of my Christmas cookie trays for sure!

I love pecans… especially the sugared pecans. I’ve never made pecan sandies before, but they might be a nice alternative to chocolate. But I’m afraid I have to wait until bathing suit season is over before trying them (wink, wink!)
